Raw rainbow salad
- 1 cup cooked chickpeas
- 1 handful green beans, chopped
- 2 celery stalks, chopped
- 1 carrot, peeled and chopped
- 1 purple carrot, peeled and chopped
- 1 zucchini, chopped
- 1 small avocado, diced
- 1 cup blackberries
- 2 tbs pumpkin seeds
- 1 lime, juiced
- Drizzle of avocado oil
- Sea salt and freshly ground black pepper
Place the chickpeas, vegetables, avocado, berries and pumpkin seeds in a bowl and gently toss.
Lightly drizzle over the lemon juice and avocado oil, season, toss again and serve.
