Orange & date salad with honey yoghurt
- 2 oranges, any type, sliced and skins removed
- 5 dried dates, pitted
- 1 tbs fresh mint leaves, finely sliced
- 1 tbs flaked almonds
- ¼ cup low-fat natural yoghurt
- 1 tsp honey
Arrange half the orange slices, dates and mint on a plate then repeat with a second layer. Sprinkle with almonds. In a small bowl, combine the yoghurt and honey. Mix well and serve on the side of the fruit or drizzled over the top if desired.
