Microwave breakfast muffins

  • 4 eggs
  • ½ cup almond meal
  • 2 tbs almond milk
  • Pinch of cinnamon
  • 200g natural yoghurt
  • 1 banana, sliced
  • ½ cup mixed berries


Microwave breakfast muffins

makes 2

Whisk 2 of the eggs, ¼ cup of almond meal, 1 tbs of almond milk and some cinnamon in a small bowl.

Place in the microwave and heat for 60-90 seconds or until the mixture is cooked through and has a muffin-like consistency.

Remove from the bowl to cool, then repeat with the remaining ingredients. Serve topped with the yoghurt, banana and berries.
