  • 4 eggs
  • 1 tbs grass-fed butter
  • 1 tbs chopped chives
  • 2 big handfuls baby spinach
  • ½ avocado, mashed
  • 2 small wholemeal or buckwheat wraps
  • Sea salt and freshly ground black pepper


Healthy breakfast burrito

Crack the eggs into a medium bowl and beat until light and fluffy.

Melt the butter in a frying pan over medium heat, then add the eggs, chives and spinach. Fold or scramble them using a heatproof rubber spatula until the eggs are cooked through and the spinach is wilted.
