Easy freekeh breakfast
- 1 cup cracked freekeh
- 1 cup strawberries, blueberries, blackberries or raspberries, sliced • 1 banana, sliced (optional)
- 4 tbs mixed plain nuts and pumpkin, chia, sesame or flax seeds
- Ground cinnamon, to taste
- 4 tbs coconut cream or natural yoghurt
Place the freekeh and 2½ cups of water in a large saucepan and bring to the boil, stirring occasionally. Reduce the heat, cover and simmer for 15-20 minutes, or until the freekeh is tender.
Drain and serve hot or cold, topped with the berries, banana, seeds and nuts, cinnamon and coconut cream. (You can also use seasonal fruit such as mango, pear, apple or nectarines.) Serve.
