Easy apple & chicken salad

  • 200g cold, cooked organic chicken breast, diced
  • 1 apple, diced
  • 2 celery stalks, diced
  • 2 spring onions, chopped
  • 30g chopped walnuts
  • 1 tbs apple cider vinegar
  • 2 tbs avocado oil (or extra virgin olive oil)
  • Pink Himalayan salt and freshly ground black pepper


Easy apple & chicken salad

serves 2

In a large bowl, toss together the chicken, apple, celery, onions and walnuts.

In a separate bowl, whisk together the vinegar and oil and pour over the salad.

Season, mix well and serve.
