Chicken with healthy slaw

  • 2 x 100g organic chicken breast
  • 2 small pink lady apples, finely sliced
  • 4 celery stalks, finely sliced
  • 1 cucumber, deseeded and finely sliced
  • 2 tbs sesame seeds
  • ¼ cup slivered almonds
  • 100g Greek yoghurt
  • Pinch of cinnamon


Chicken with healthy slaw

Grill or pan-fry the chicken until it lightly browns, then set aside. Once cooled, thinly slice.

Place the apple, celery and cucumber in a large bowl and toss to combine. Add the sesame seeds, almonds and cinnamon and toss again.

Add enough yoghurt so that all the ingredients are evenly coated once tossed through (you may need more or less than 100g), then serve topped with the sliced chicken.
