Bran, banana & blueberry muffins

  • Olive oil spray
  • 1 cup oat bran
  • 1 cup white self-raising flour
  • Pinch bicarbonate of soda
  • 1 tsp mixed spice
  • 50g brown sugar
  • 2 medium bananas, mashed or sliced
  • ½ cup frozen mixed berries, thawed
  • 300ml skim milk
  • 50ml olive oil
  • 2 free-range eggs


Bran, banana & blueberry muffins

Preheat the oven to 180°C. Spray a 12-cake muffin pan with the oil and line with muffin cases. In a bowl, mix together the oat bran, flour, bicarbonate of soda, mixed spice and sugar.

In a separate bowl, beat together the fruit, milk, oil and eggs until combined, then pour into the dry ingredients and stir to combine.

Fill each muffin case with the mixture and bake for 20 minutes or until just firm to the touch. Allow to cool for 5 minutes before removing from the tray. Serve.
